Watercress side salad with citrus dressing & almonds

  Serves 2
  Vegetarian

Ingredients

  • Zest & half the juice of 1 grapefruit, 1 lime, 1 lemon
  • 1 tsp of Dijon mustard & 1 tsp of wholegrain mustard
  • 100ml of cold pressed rapeseed oil
  • 50g whole or flaked almonds
  • 85g washed watercress
  • 20g sliced red onion rings

Preparation

Combine citrus juice and zest with mustards and mix thoroughly to emulsify. Slowly add in the oil until completely combined.

Place watercress and onion rings in a large bowl and add half the dressing. Toss well and transfer to a serving bowl. Sprinkle over the almonds and serve.

Save the remaining dressing for your next salad!
