Hot smoked salmon & watercress sandwich

  Serves 2

Ingredients

  • 1 packet of good quality hot roast smoked salmon
  • 1 tbsp of baby capers or bigger capers (chopped)
  • 1 tbsp of finely diced gherkins
  • 1 tsp of finely chopped flat leaf parsley
  • 1 tsp of chopped fresh dill
  • Zest & juice of a lemon
  • 1 tbsp of crème fraiche
  • 4 slices of good quality rye bread
  • Thinly sliced cucumber
  • Watercress

Preparation

Combine all ingredients (except cucumber, bread and watercress) thoroughly to achieve a coarse pâté like consistency.

Serve generously between two slices of rye bread, plenty of the cucumber and watercress.

This can also be great as a pâté for a fresh and light starter!
